Pizza crust 75 minutes

1 1/3 cups water -- warm 105F
2 1/4 teaspoons yeast
1 tablespoon sugar
2 tablespoons olive oil
4 cups flour
1 1/2 teaspoons salt

Set oven to 200F for 10 minutes then turn off.

Mix water, yeast, sugar until dissolved. In food processor with either a metal or plastic blade add the rest of the ingredientsand process for 30 seconds. Let rest for 2 minutes then process again for 30 seconds. Remove from the processor and work by hand for another minute until dough is smooth and satiny.

Lightly oil a large bowl and place the dough inside. Cover with plastic wrap and place in the oven for 40 minutes or until doubled. Punch down the dough and separate. Let rest for 10 minutes under a damp towel then shape.

Cover with toppings then bake at 500F for 5 minutes on a stone in an oven that has been preheated for 30 minutes.
